Vanilla peach compotes

It’s getting super hot in Japan.

Which means our peach season will be over soon.

Best peach season in Japan seems to be shorter and shorter,,,,maybe because of the global warming.

It reminds me that we can do more things to save the earth.

Peaches we can find in the Japanese big supermarket are normally clean and fresh but expensive.

In my local, I can find fresh and cheap but little bit dirty peaches in the small grocery store.

These might look dirty outside but beautiful inside.

I decided to make vanilla peach compotes with these nice peaches.

Making compotes is pretty easy.

Just to make syrup and boil peaches in it.

You don’t need to care about the best ratio of sugar and water.

All you can do is to start this ratio.

Water : sugar = 3 : 1

And taste it.

If you like it, it’s done.

If you want more sweetness, you can add more sugar.

Just trust your sense of taste.

At this time, I added vanilla beans in the syrup.

The syrup is richer and good to make jelly after eating all peaches.

If you don’t have vanilla beans, don’t worry!!!

You can use vanilla extract as well.

However, please add the extract little by little not to add it too much.

Japanese peaches are different from peaches in North America.

Japanese peaches are bigger than North American peaches.

We normally eat ripen peaches.

That’s why our peaches are juicy and soft.

It might be difficult to handle them because it’s too soft and juicy.

If you break it, also don’t worry.

You can use any peaches you have.

All ingredients you need are...

Peaches
Water
White sugar
Vanilla beans
Lemon juice

And these are ingredients I actually used at this time.

7 Peaches
650ml water
200g sugar
1/4 vanilla beans
1 tsp lemon juice

Here is the instructions.

Wash peaches nice and clean because we want to make a clear syrup.

Cut peaches in half like avocado.
(Cut it along the stone and twist it to remove the stone)

You don’t need to remove the peel.

In a pan all peaches can fit, add water, sugar and vanilla beans and boil it to make syrup.

When it’s boiled, add all peaches in the hot syrup.
The peel side is the bottom at first.

Keep boiling them for 10 mins and add lemon juice.

flip them over and keep boiling for more 5 mins.

Turn off the heat and let them cool.

Remove the peels and keep it in the fridge.

You can enjoy the peach compotes with ice cream and yogurt.

I also made vanilla peach short cakes.

Also you can make jelly with the syrup.

The syrup has nice peach and vanilla flavor.
