Wagashi - Japanese confections

I love baking since I was a kid.

I don’t remember the trigger I started baking and the reason I loved it.

Only what I can say is “I simply love baking.”

I also love North American culture, especially food culture and baking.

I started to learn English because I wanted to know them more.

I kept interested in North America and ignored Japanese culture.

However, I wanted to introduce Japanese confections “wagashi” in the presentation class when I was in Canadian baking school.

People sometimes ignore the greatness of something, when it’s too close to you.

When people are away from it, they realize how great it was.

I could realize the greatness of wagashi, which shows Japanese 4 seasons with beans, sugar and agar-agar.

I love the word “confectionary art”.

And I believe that making confections is science and also art.

I want to keep practice to make wagashi and show my world with them.
