Low carb cinnamon rolls

I heard “low carb diet” many times but didn’t have enough knowledge.

Only what I know are “less carbohydrates” and “less sugar”.

I’ve never found female friends who tried low carb diet.

I saw same young male colleagues who tried it for their beautiful macho bodies.

That’s why I did not get interested in it until I met a guy a few month ago...

The big opportunity to know about low carb diet

I met a pharmacist who have had a cancer and fully recovered.

He started to study more about cancers because of his experience.

And he told us his experience and advice.

I was very interested in his talk because some of my family members had cancer.

According to his talk, carbohydrates will be the energy to live and enjoy our lives.

However, carbohydrates will be also energy for cancer cells like their favorite foods.

Patients who have cancers take Pet scan.

Before the scan, they need to drink sweet liquid.

Cancer cells will activate because they love the sweetness.

Then we can find where the activated cancer cells is through the scan.

This explanation from him made sense.

I got interested in low carb diet more and more.

Because they might be weak, if we can cut cancers’ favorite foods.

He also told us low carb foods including low carb breads and low carb noodles.

I realized I could bake low carb breads because I have baking knowledge.

Then I started to bake them.

Ingredients of low carb breads

I normally use soy bean powder and wheat bran powder instead of bread flour.

Wheat bran is one of three layers of the wheat kernel.

It has less carbohydrate.

It also has fibers and rich minerals including iron, calcium and so on.

Soy bean powder has good protein.

Which means we can bake good nutritious and low carb bread with these ingredients.

We can cut wheat flour completely if we want.

However, I don’t use that way intentionally.

Because I believe that we, human, need carbohydrates for energy to live such as breathing, sleeping and using organs.

That’s why my recipe has some bread flour.

How to make “low carb cinnamon rolls”

You might say

“Hey!!! Cinnamon rolls has sugar!!! It’s not low carb!!!!!”

I can answer

“You are right.”

“This cinnamon rolls are higher carbohydrate than simple low carb bread.”

“But this cinnamon rolls are also lower carbohydrate than normal cinnamon rolls.”

If you want to cut carbohydrate as much as possible, you can find other recipes or just bake round breads without cinnamon sugar.

Low carb diet is sometimes stressful.

Because they cannot always eat what they really want.

If they eat some cakes, cupcakes and brownies, they will feel guilty.

I made this recipe to reduce their guilty feeling when they want to eat cinnamon rolls.

This bread has same fluffiness as normal bread.

Recipe

《ingredients》(6 rolls)
(For bread dough)
・bread flour 150g
・soy bean powder 70g
wheat bran bread mix from Tomizawa 70g ※
・Wheat bran powder 20g
・water 220ml (little bit lower than body temp)
・salt 6g
・instant dry yeast 4.8g
・brown sugar 2 tbs
・olive oil 2 tbs
※ this mixed powder is only available in Japan.
If you can not get it, please use bread flour 35g and soybean power 35g instead of “wheat bran bread mix from Tomizawa 70g”.

(For filling )
・Brown sugar 3tbs
・cinnamon powder 1 tsp
・unsalted butter/ melted 1+1/2tbs

《methods》

1. Put all ingredients for bread dough into the bowl and mix them well with the spatula.

2. Knead the dough by hands or standing mixer for about 12 mins.

3. Make the dough round and put the dough in the bowl.
For the first fermentation, put the plastic wrap on the top of the bowl.

4. Punching the dough when it become double size.

5. Roll the dough rectangle shape.

6. Brush melted butter on the surface and sprinkle cinnamon sugar on top.
(Not sprinkle it too much!)

7. Fold the dough in three.

Then you can see the rectangle dough again.

8. Do the process 5, 6 and 7 again.
Then do the process 5 and 6 once again.
Now you can see the rectangle dough with cinnamon sugar on top.
Roll the dough from the edge like making California rolls.

9. Cut the dough into six and put these dough in the cake pan.
I used square pan.
If you don’t have you can use round pan as well.

10. Proof it until the dough become at least 1.5 size.
(Preheat oven 200℃)

11. Put the cake pan in the oven, 200℃ and bake it for about 20mins.
Depends on the oven, the baking time must be different.
Please check the bread from oven window sometimes after 15 mins.
If the surface looks baked enough, it will be good to go.

12. Remove the cake pan from the oven when it’s done. And let it cool.
When it’s cool enough, keep them in the plastic bag not to stale.
