まず、この文章の主語・動詞を確認しますと、主語：I・動詞：hopeであることは直ぐに分かります。動詞の直後にthatがあり、that節が文末まで続くのであろうと想定して読み進めていきます。

these Olympicsをみて、that節内の主語に当たるモノが見つかり、that節における動詞を探しに行くのですが、", which are ..." が始まっています。ここで、whichは非制限用法の関係代名詞（先行詞：these Olympics）であると判断して、取り急ぎ"... 57 years,"まで読み飛ばします。

そうすると、"will demonstrate" が見つかりますので、that節内の主語：these Olympics、動詞：demonstrateであることが分かります。この直後に"... capabilities that Japan possesses"と続いており、thatは関係代名詞で、「日本が有する能力」となります。
