５　寿司

　寿司（すし、鮨・鮓）とは、一般に米飯などと主に魚介類を組み合わせた和食。特に握り寿司のこと。伝統的にわさびと一緒に食べられます。
寿司には、乳酸を主たる酸味成分とする寿司（なれずし等）と、酢酸を主たる酸味成分とする寿司（早ずし）があります。
　握り寿司が代表的ですが、江戸前寿司の原型である大阪の箱寿司、いなり寿司、押し寿司、ばら寿司など様々な形態があります。また、巻き寿司や稲荷寿司など必ずしも魚介類と組み合わせない寿司もあります。さらに卯の花寿司や蕎麦寿司のように米飯ではない材料を用いた寿司もあります。
　回転寿司（かいてんずし）とは、小皿に盛った各種の寿司を、客席沿いを回るコンベアに載せて供する寿司店。客は目の前を通る寿司を自由に選び取って食事する、半セルフサービス方式をとります。

5 　Sushi

　　　Sushi is a Japanese dish that generally consists of a combination of rice and other seafood. Especially about nigiri sushi. Traditionally eaten with wasabi.
There are two types of sushi: sushi whose main sourness component is lactic acid (such as Narezushi), and sushi whose main sourness component is acetic acid (hayazushi).
　　　Nigiri sushi is a typical example, but there are many other forms of sushi, including Osaka box sushi, which is the original form of Edomae sushi, inari sushi, pressed sushi, and rose sushi. There are also sushi such as maki sushi and inari sushi that are not necessarily combined with seafood. Furthermore, there are sushi that uses ingredients other than rice, such as Unohana sushi and Soba sushi.
　　　Kaiten-zushi is a sushi restaurant that serves a variety of sushi on small plates on a conveyor that rotates along the seating area. The restaurant uses a semi-self-service system, allowing customers to freely select and eat the sushi that passes in front of them.　（To be continued）
