広島のソウルフードの一つ。具材と生地を混ぜて焼く関西風とは違い、薄い生地の上に具を重ねて蒸し焼きにするのが広島風の大きな特徴。目の前に鉄板があるカウンター席に座り、本場の焼き手さんの手でお好み焼きが徐々に出来ていく様子を眺めるのも一興。

Okonomiyaki is of Hiroshima’s “soul foods.” Unlike the Okonomiyaki found in Kansai area—where the ingredients are mixed in with the batter—the Hiroshima-style sandwiches the ingredients between two thin pancakes. Take a seat at the counter with the flat-iron griddle right in front of you, and watch it all mastefully come together.
