Drinking Zheng Shan Xiao Zhong 正山小种 and Jin Jun Mei 金骏眉 (Chinese black tea)

Zheng Shan Xiao Zhong, a rich black tea is the ancestor of world's black tea, and Jin Jun Mei, a full-bodied black tea yet with the slight natural and fantastic honey flavor are siblings so I will introduce together!

What Are They and What Are the Differences?

Jin Jun Mei was invented based on Zheng Shan Xiao Zhong in 2005. While Zhengshanxiaozhong uses leaves, Jin Jun Mei uses fresh-grown baby leaves yet to be grown leaves. 

What Is Zheng Shan Xiao Zhong?

Type: Black tea

From: Fujian, Wu yi shan

Effective for active urine, control inflammation, detoxification, good mood and recover from exhaustion, healthy stomach 


How To Drink?

Tea set: Gaiwan

Water temperature: 90 degrees  (after you put water to empty glass, shake it for 10 times like round and it becomes about 95 degrees :D )

Amount of leaves: 5g


Steps

1. Wash cups 

2. Place tea leaves

3. 洗茶 (Xicha / first hot water poor into gaiwan with tea leaves and wash in order to wash) with 90 degrees water (the water must be cooled down naturally.)

4. Very quickly (2-3sec) abandon the water

4. From 2nd tea, serve it to each glasses. 2nd tea must be 2-3 sec, 3rd tea will be 3-5sec, after 4th will be 3 -10 sec.


What Is Jin Jun Mei?

Type: Black tea

From: Fujian, Wuyishan

Effective for heart & brain disease, active urine, good mood and recover from exhaustion, control blood sugar concentration, healthy stomach, strengthen bones and teeth


How To Drink?

Tea set: Gaiwan

Water temperature: 90-95 degrees

100 degrees are too hot for a fresh baby leaves. It could kill the best of fresh leaves.

Amount of leaves: 5-6g


Steps

1. Wash cups 

2. Place tea leaves

3. 洗茶 (Xicha / first hot water poor into gaiwan with tea leaves and wash in order to wash) with 95 degrees water and very quickly (3-5sec) abandon the water

4. From 2nd tea, serve it to each glasses
